Fast food emerged in the 1950s in the United States and dramatically changed the world's food culture. In Japan, the number of users has increased significantly in the last 30 years. Studies show that the average calorie intake of fast food today is 767 kcal, with a side menu on the main menu. If the average daily calorie intake for adults is 2,000 kcal, fast food accounts for nearly 40%. Adding a high-calorie soft drink to this will increase the calorie ratio to 45-50%.
In particular, seasonal products tend to be less healthy than those available throughout the study period. The number of fast-food chain stores is increasing worldwide, with 37% of adults in the United States aged 20 and overusing fast food more than once a week.
“The dietary environment has changed a lot over the last few decades, and fast food is very popular. We can't help but think of it as being associated with an increase in chronic diseases such as obesity and type 2 diabetes, and heart disease.” Said Mr McCrawley.
The research team investigated the use of fast food by Americans in three categories, 1986, 1991, and 2016, and classified fast food into 1,787 categories. We surveyed the menus of the top 10 fast-food chains in the United States, including McDonald's, Dairy Queen, and Kentucky Fried Chicken. We examined the menu items, calorie intake, portion size, energy density, and intake of nutrients such as salt, calcium, and iron.

Analysis of fast food menus is divided into three categories: "main menu", "side menu", and "dessert". As a result, the following was revealed-.

  1. The total number of items in the main menu, side menu, and desserts for fast food has increased 2.26 times in 30 years. This is an average of 22.9 more items added per year.
  2. Fast food calories have increased significantly in all three categories. The calories increased the most in desserts: 62 kcal per meal in 10 years, nearly 200 kcal in 30 years. Subsequently, the main menu increased by 30 kcal in 10 years and nearly 100 kcal in 30 years. These are mainly due to the increase in portion size.
  3. Not only calories but also salt (sodium) is increasing in most menus. The salt content increased by 4.6% on the main menu, 3.9% on the side menu and 1.2% on the dessert per day for 30 years.
  4. We investigated the contents of calcium and iron in 4 out of 10 chain stores and found that calcium increased in salads and desserts, and iron increased in desserts. Increasing calcium and iron content is welcome to prevent anaemia of bone health.
However, an increase in calories and salt is not preferable from the viewpoint of preventing and improving obesity, type 2 diabetes, hypertension, and dyslipidemia.
Ingenuity for consumers to make healthy choices
“Salts and too many calories must be decreased by creative solution It's a good trend that more chains are displaying calories and nutrition on their menus, but not enough. We need to make more changes, such as adding more menus that are smaller in size and cheaper in price," says McCawley.
Increasing obesity and type 2 diabetes are also serious problems in the United States, and how to improve the dietary style strongly associated with these problems is a challenge.
